Espresso Martini

The named article continuously goes through edit war by IP users. So some protection is required against such edits.srini (talk) 16:50, 21 January 2017 (UTC)

I did a little editing and writing in the article, in part the rationale was to explicitly point out why the edits were vandalism. This morning I placed a vandalism warning on the IP user's talk page after yet another attempt this morning. I believe it takes four warnings for the administrators to block an IP. That number may have already occurred in rollback edit summaries. Blocking the IP seems a better course of action versus page protection due to the infrequent timing of the vandalizing edits, only once or twice a week. Gzuufy (talk) 17:49, 2 February 2017 (UTC)

"Chocolate tea" - redirect to tea? Disambig? (Nigerian English)

I learned that in Nigeria what is called "chocolate tea" really refers to "hot chocolate" stemming from the Nigerian custom of calling any morning beverage "tea". A Daily Trust article confirms this:

"Question:
I recently traveled outside Nigeria and was surprised to discover that most of us actually don’t drink tea in Nigeria. We call everything we drink in the morning “tea” even if it’s not.
Answer:
You’re right that “tea” has become the generic term for all kinds of beverages in Nigeria. Most Nigerians mix “Milo,” powdered milk, sugar and water, and call it “tea.” Native English speakers would call that “hot chocolate” or “hot cocoa,” not tea. Tea is made by seeping tea leaves, such as Lipton tea, in water. When my daughter and I visited Nigeria in 2012, she made the same observation. “Daddy, why do Nigerians call hot cocoa ‘tea’?” she asked me."

I'm considering making "chocolate tea" a disambiguation page - pointing to both "tea" and "hot chocolate". This would serve Nigerian readers pointing them to the right place, but it also serves Americans/Brits/Australians/New Zealanders/Irish by pointing them to "tea" for any actual variety of tea flavored with chocolate. Category:Restaurants by year of establishment

I just went through all the pages there and removed from these categories any of them that had been placed in yearly Retail companies establishment categories. Image of ingredients in a food dish article?

As the headline says, does one include an image or images of ingredients in a Wiki article about a food dish?--Joobo (talk) 15:49, 27 June 2017 (UTC)

As ever with Wikipedia, the answer is "it depends". There is no blanket ban on including images of anything, so long as it adds value and doesn't overly clutter the article (hence, making it harder to read). Your WP:NOTCOOKBOOK arguments to the other user regarding the carbonara page are spurious; the image was added to illustrate common basic ingredients and isn't giving any sort of 'how to' information. If you followed your WP:NOTCOOKBOOK reasoning editors wouldn't even be able to mention in prose what the ingredients are for any concocted foodstuff, which is clearly an absurd position. That much is clear from the policy documents. For this circumstance, I would argue that for a foodstuff such as carbonara, where the sauce ingredients are significantly changed during cooking, a simple single image with the ingredients shown together helps the reader understand the transformation that has been made. However, each ingredient shown in individual images would be less useful and would take up more space, likely meaning that the overall benefit was insufficient to justify their inclusion in an article that length. So would you favour the inclusion of the concerned image or not? I think it does not fit in, also because it is flawed, since the pork portrayed in the image is bacon cubes, whereas in the original Italian recipe it is either Guanciale or Pancetta- no bacon cubes. --Joobo (talk) 18:09, 27 June 2017 (UTC)
In this case I don't see a problem with it, and given that any other illustration of carbonara itself is either going to be a nondescript white-ish sauce or pasta covered in same, it adds visual interest and (as mentioned) helps a reader to understand the fundamental character of the dish. The use of bacon is consistent with the prose description that states "Guanciale is the most commonly used meat ... but pancetta and local bacon are also used." Certainly for most people making this dish outside of Italy, 'local bacon' will be the most easily obtained form of salt-cured-dead-pig available. This fine distinction could be alluded to briefly in the image caption. Pyrope 20:23, 27 June 2017 (UTC)

How does this version strike you? Not perfect placement, but reasonable given the length of the article. Positioned directly adjacent to the prose discussion of the subject, and set to 'upright' to bring image size in line with common thumbnail areas. Pyrope 22:59, 27 June 2017 (UTC)

Food desert

Small question: The sections "Transportation barriers to food access" and "Rural food deserts" have overlap/redundancies on transportation issues specific to rural food deserts. I'm torn on how to proceed and would love a second opinion. The choices are:

1). Consolidate transportation info on rural food deserts into a new subsection of "Transportation barriers to food access."
OR
2). Have ""Transportation barriers to food access" appear before "Rural food deserts"; then move info specific to rural desert transportation into "Rural food deserts."

Skingski This content is kind of a mess. The sources are not high quality because they discuss regions of the United States from more than 10 years ago. Whatever they say might be outdated, and might never have been broadly relevant. Of the options you present, I favor #2, because the information is redundant and having even more sections probably will not lead to clarity.
Alternatively, since there is so much regional content from so many countries and since all of it refers to different time periods, if I were revising this, I would fork all the regional content (everything about the United States or any other country) into a new article called, Food deserts by country. That new article could be a dump for all of this unsorted content. Back in this article, the summary could be "Different regions have handled this in different ways in different times..." then link to that article. If anyone wished to do so, they could revise and update new articles titled "Food deserts in the United States" etc. The main food desert article should be more stable, general, and timeless. It is a problem to mention regions and years, because situations will change from time to time and readers of the main article should not be overly exposed to information which only applies to specific regions.
Despite the titles, the "Transportation barriers to food access" and "Rural food deserts" sections do not actually discuss those topics. These topics could have their own sections but not with the current content. I am not sure if it is priority to rework those sections now, but if so, then I hope the new coverage could be more international. Blue Rasberry (talk) 20:26, 24 July 2017 (UTC)
Bluerasberry -- Oh God, yes. The article was even worse before I got to it. I have not dug into the references much yet, but so many are policy papers or opinion pieces on advocacy sites, not research, and often they do not even cite what is actually in the paper.
I love your suggestions, especially splintering off a "by country" page. As you see, the food desert definition changes by continent, rural and urban. Would "Food deserts in the United States" be a separate page since US (and Canada) have the most research papers and programs to solve them?
As you say, timelessness is needed as conditions change (online groceries may obviate the entire topic one day); I agree 100% with you.Skingski (talk) 20:41, 24 July 2017 (UTC)(talk)
Skingski The fork would not be about the origin of the papers, but about region-specific content. For example, research in any country might lead researchers to define general concepts. We can still use local papers as sources for international concepts. The point of forking is to improve the quality of this page by differentiating high-quality, more general information from less useful dated and region-specific info. We could have as many articles needed. The usual top-level articles for regions are typically called "...by country". First, all the information goes there. If there is too much information on the US, then we fork that content into yet another article, but if that article is not so long, then we keep it there. Doing this makes it more welcoming for people to share regional content without having oddly specific regional or dated information in the general article.
I could give a go at any part of this, or support you in doing it. We do not have to commit to anything. Sometimes it is easier to think about by doing it and seeing how it looks after. Blue Rasberry (talk) 11:07, 25 July 2017 (UTC)

Wheat mildew

Wheat mildew is a bot-generated article whose only reference is Household Cyclopedia. The article is terribly out of date and was tagged for 'tone' in 2007. In my opinion, its only interest is historical (and the history of housekeeping or wheat belongs elsewhere). Will no one rid us of this pestilential WP confusion over Macaroon and Macaron?

   It would be a great relief if further research supports having two articles for these doubtlessly closely related goodies. But the most plausible hypothesis that they're arguing over subtle distinctions that are likely to reflect 1200 years of experimentation, changes in quality and sources for ingredients, and too many good traditions and changes in tastes and practices, and in availability and cost of ingredients, to identify any association between two (rather than dozens of) confections and two spellings of obviously related words: we may need an article on Macaroon and macaron pastries. The competing attributions to two separate religious orders (with perhaps an in some sense common ancestral text) would be interesting to flesh out via reliable sources, but the parallel claims to have saved their respective nuns (or coincidental pairs of nuns) with sweets sound too much like versions of a single fairy tale to be encyclopedic. (Which of course is about reliable sources that no one has identified beyond two competing old wives' tales.) We can't continue to entertain the following curious differences between two doubtless competing, presumably related, probably gradually mutating, oral and perhaps scriptorium traditions, represented here by embarrassingly weak syntax:

   At Macaroon#Origins, we find

(-) ... Culinary historians write
(1) that macaroons can be traced to an Italian monastery of the 9th century.
(-) The monks came
(2) to France in 1533, joined by the pastry chefs of Catherine de Medici, wife of King Henri II.
(3) Later, two Benedictine nuns, Sister Marguerite and Sister Marie-Elisabeth, came to Nancy seeking asylum during the French Revolution. The two women paid for their housing by baking and selling macaroon cookies, and thus became known as the "Macaroon Sisters".[1]

   I suggest that since none of those sources' titles hint at the likelihood of passing muster as WP:RS, discussion is unlikely to be advanced without citation of refs better than those three!

   Ah! My continental-cuisine informant has returned from the wilds of New Hampshire, and informs me that there is a clear distinction between the two kinds of cookie, sorry, pastry. So what's missing from the suite of 2 mac...n articles is, at most (1) acknowledgement that at least one the two origin stories must reflect folk processing, and (2) perhaps sections in the respective articles acknowledging the possible divergence from a common ancestor, and popular confusion among us riff-raff about terminology.

American state-specific categories

What is the appropriate naming convention for U.S. state-specific cuisine categories? Currently, three conventions are used:

List of hot sauces

Was wondering if someone from this WikiProject might take a look at this article per Talk:List of hot sauces#Wikipedia is not a product catalogue. I tend to agree with Jonathanischoice who started that talk page thread in that there does seem to be problems with WP:LSC which need to be addresed. I've removed some embedded links already, but many of the "reliable sources" cited are just links to official pages. My first notion was just to remove anything without it's own Wikipedia article per WP:CSC, but noticed that would still leave many entries which are just redirects. Thatchers Cider

Would any of the experts from this wikiproject be willing to take a look at the article on Thatchers Cider? It has a banner which says it "reads like a press release or a news article". The company has "engaged" on the talk page requesting/suggesting edits and it also has a banner about conflict of interest and paid editing. Bread roll

A terrible Eurocentric article. I tried to add an image of a Filipino roll but I'm crap at getting sizes right. You'd think only Europeans had rolls if you read the article, and the version before me said that German and Austria had an unusually large number of types of rolls which sounds nonsense. The primary Filipino roll seems to be the pandesal but that is European in origin. I suppose that most US varieties are European in origin too. Doughnuts and croissants are quite separate in my view but they come from Europe too. Andrew D. (talk) 08:27, 28 November 2017 (UTC)

Please note that in The Ritz Carlton Cook Book and Guide to Home Entertaining by Helen E Ridley copyright 1968 published by J B Lippincott Company, Library of Congress Catalog # 68-24137 on page 48 "For shellfish the best-liked is the piquant, nonfat Ritz Cocktail Sauce, a Ritz original now seen on menus everywhere" RITZ COCKTAIL SAUCE Makes 1 cup: 2/3 cup catchup; 1/4 cup chili sauce; 1 tablespoon each of Worcestershire sauce and grated horse-radish; 4 dashes Tabasco; juice 1/2 lemon. Mix together all ingredients and chill in refrigerator.

Perhaps this predates Fanny Cradock reference?

post WWII margarine in bags with separate color bubble, to be hand mixed by squeezing

I was born in 1944 and just flashed on a childhood memory of margarine packaging. It came in a heavy plastic bag which also contained a dark bubble of food coloring. It was either yellow or orange, probably the latter. My brother and I used to argue over who would get to pop the bubble and squeeze the coloring into the white mass to make the margarine appear more like butter, ergo more palatable. (I thought I'd post the memory to Face Book to see if any of my contemporaries remembered it as I do. Are pubs and bars different?

  • The word bar has many meanings and its primary meaning is "a piece of any material long in proportion to its thickness or width" – like a rod, ingot or slab. So, for example, in front of you right now, you probably have a space bar on your keyboard. In food, you have the bar of chocolate and the candy bar. That primary shape concept is poorly served on Wikipedia and so the page in question should probably become the disambiguation page per WP:CONCEPTDAB.
The term became used for retail establishments, as they would typically have "A barrier or counter, over which drink (or food) is served out to customers, in an inn, hotel, or tavern, and hence, in a coffee-house, at a railway-station, etc." Such bars don't especially have to serve alcohol and so you have coffee bars, nail bars, sushi bars and so on.
The word pub is better as there are less alternative meanings and it better covers the entire building. A public house, alehouse or tavern would usually have several bars including the saloon bar, the private bar and the public bar. The use of the term bar to mean the entire establishment is a synecdoche. This is unsatisfactory because it is confusing.
So, I favour moving the current bar to bar (retail) and then moving bar (disambiguation) to bar. Andrew D. (talk) 08:12, 28 November 2017 (UTC)

Request for Harvest Spirits Farm Distillery LLC

My name is Sherwood D. Ludwig, a distiller at Harvest Spirits.

I have recently submitted a request form for my distillery to have a page on Wikipedia here.

I feel that, being one of the first distilleries to be created in New York since the Prohibition era, as well as the recent resurgence of craft products in the region, it is important to document and record the older distilleries at this ten year mark.

I did not see an option for small business in the business category, nor an option for spirits producers, so I submitted this request here.

Politicization of Candy making Article

I respectfully dispute inclusion of the 3rd and 4th paragraphs under the History section of the Candy Making article. They violate the NPOV principles pertaining to balance in that they give undue weight to the topic of Gender Discrimination in an article about Candy Making. Gender Discrimination is a fine topic on its own but is not of significant importance to be included an article about Candy Making.

Gender discrimination issues only tangentially have anything to do with the actual topic of Candy Making. Let's keep the lens through which we view every topic a more neutral one. Surely whatever message the author of these paragraphs might want to convey about gender discrimination can be properly addressed elsewhere. It alienates many readers to turn even the remotest topic on Wiki into a political platform. There is enough criticism of Wiki bias as it is.

Nutritional value tables

Hey, I noticed many nutritional value tables have values for cooked/prepared foods, even for basic ingredients, for example adzuki bean. Is there any reason/guideline for this? As ways of preparing food can vary, and it isn't known how the food the values are given for was prepared, these are probably not as useful as values for raw, uncooked food would be. --62.165.209.8 (talk) 12:45, 28 January 2018 (UTC)

The guideline in place is that the information should come from a reliable source which Wikipedia identifies with a citation. At the bottom of the box you can see that this information comes from the United States Department of Agriculture. Since they are the best authority that anyone in Wikipedia has identified, then Wikipedia presents the information in the way that this organization does.
If you have ideas and information for a better way of presenting information then share it. There is no obligation to fix everything but if you have something to say to advance the discussion then talk it through with a foundation in what the best available sources do. I'm saying that if it's an article about such a basic food ingredient then the nutritional table should also be about the most basic, raw, uncooked version. There are many ways to prepare such food and giving the nutritional values of only one of these isn't really informative. Values for cooked food should be avoided unless the article itself is about the cooked version.

Hi. During the last round of edits of DiCamillo Bakery the whole part about awards was removed. Not knowing much about the US food industry awards, I wonder how important these mentions were. Please tell if these award have any "weight" or not? 2001 and 2006 SOFI awards had references that were removed in the previous round of edits.

During the 2000s, the bakery won an ADDY Award in 2004[1] and regional awards in 2006,[2] 2007[3] and 2008.[4] It was a National Association for the Specialty Food Trade SOFI award finalist in 2001 and 2006, and winner in 2007.[5]

In 2016, Specialty Food Association included Michael Di Camillo, grandson of the founders, into its Hall of Fame, acknowledging his influence on "The Biscotti Decades" of the 1980s and 90s.[6]

Reference edit

In the references section of the Foodservice article, the following is listed as a reference:

"I enrolled in, got a 3.8GPA in, and earned certification in a Restaurant Operations course"


What the hell kind of reference is that? First off, who is "I" and who approved that reference? That reference makes zero sense and there is no way it can stand as a valid reference. I am suggesting that it should be removed from the article being that it makes zero sense whatsoever.

ENGVAR mess

A person who speaks British English and who is editing from a variable IP went through Sugar candy and Confectionery during the last few weeks, and re-wrote them to match his idea of what should be on pages with those titles. I'm undoing the mess (oh, my word, what a mess WP:ENGVAR conversions can produce in articles like this) in those two articles, but I would really appreciate it if someone else looked around at other candy-related articles and made sure that we didn't have the kind of confectionery-is-sweets-is-rock candy mess that we've got at the moment.

Hospital food

Do we have an article about hospital food or food for sick people or something like that? I ran across http://www.foodandwine.com/news/10-hospital-meals-around-world and a quick search suggests that there are more sources available. I have not been able to find any reliable up-to-date information on Baskin-Robbins. Their company website is dead (and has been so for some time), the Wikipedia article is hopelessly out of date, with tons of unsourced superlative claims (sources have been requested on the talk page for years, in vain), and personally, I have not seen a store anywhere I went during the past couple of years. Newsletter uses too much transclusion

I found an issue while examining Template talk:Reply to#User talk pages. Your newsletter posted to user talk pages (latest was in November 2016) transcludes Wikipedia:WikiProject Food and drink/Newsletters/template, mainly edited by Northamerica1000. It uses an unreasonable amount of the 2 MB "Post-expand include size" limit at Help:Template#Template limits. For example, User talk:Jerem43 only has 45 kB source but already passes the 2 MB template limit on the fifth newsletter at User talk:Jerem43#WikiProject Food and Drink Newsletter: September 2016. That means no transclusions are performed from that point. Previewing that section alone will transclude the newsletter and currently shows this at the bottom of the edit window: "Post-expand include size 409,360/2,097,152 bytes". Move "Lazy Dog Cafe" to "Lazy Dog Restaurant & Bar"

I would like to move the Lazy Dog Cafe article to a new name "Lazy Dog Restaurant & Bar." I've requested this move on the "technical section of requested moves" page but it was removed without any action. I'm posting here because the other option seems to be requesting this as a "controversial" move, although I'm not sure why it would be a controversial change.

The restaurant chain has changed names, reference this article from 2007 in which it is referred to as "Lazy Dog Cafe" and this more recent article (2016), in which it is referred to as Lazy Dog Restaurant & Bar. Additionally the previous URL "Lazydogcafe.com" now redirects to "Lazydogrestaurants.com."

I am new to Wikipedia and thought this change would be an easy first "project," but cannot figure out how to do it. If anyone is able to help, I would appreciate it. Thanks!

Dutch baby pancake

This is suddenly in the news with UK media discovering that Americans don't call them Yorkshire puddings. There's some discussion on the talk page. As an aside, it's interesting that our Yorkshire pudding article has an 18th century quote saying you start with a pancake batter. But we don't call them pancakes in the article, probably because they aren't pancakes. Dutch babies however are. I like them all but make Dutch babies much more often than the others. WikiProject collaboration notice from the Portals WikiProject

The reason I am contacting you is because there are one or more portals that fall under this subject, and the Portals WikiProject is currently undertaking a major drive to automate portals that may affect them.

Portals are being redesigned.

The new design features are being applied to existing portals.

At present, we are gearing up for a maintenance pass of portals in which the introduction section will be upgraded to no longer need a subpage. In place of static copied and pasted excerpts will be self-updating excerpts displayed through selective transclusion, using the template {{Transclude lead excerpt}}.

Maintainers of specific portals are encouraged to sign up as project members here, noting the portals they maintain, so that those portals are skipped by the maintenance pass. Currently, we are interested in upgrading neglected and abandoned portals. There will be opportunity for maintained portals to opt-in later, or the portal maintainers can handle upgrading (the portals they maintain) personally at any time.

Background

On April 8th, 2018, an RfC ("Request for comment") proposal was made to eliminate all portals and the portal namespace. On April 17th, the Portals WikiProject was rebooted to handle the revitalization of the portal system. On May 12th, the RfC was closed with the result to keep portals, by a margin of about 2 to 1 in favor of keeping portals.

There's an article in the current edition of the Signpost interviewing project members about the RfC and the Portals WikiProject.

Since the reboot, the Portals WikiProject has been busy building tools and components to upgrade portals.

So far, 84 editors have joined.

Vandalism on Proofing (baking technique)

An IP editor is changing all instances of the word "proofing" to "proving", asserting "proofing" is incorrect English. They have been asked to provide a source, and not to change any of the quotes in citations which reflects the usage of those reliable sources, but their response is "dumbass...". We could use another editor to keep an eye on the page to avoid the dreaded edit war. Gzuufy (talk) 23:09, 30 July 2018 (UTC)

Chile spiced mango

Chile spiced mango currently redirects to the supermarket Trader Joes. I find this odd, since there's no Trader Joes near here, and I've seen chili mango , spicy chili mango, etc around. Is this specific enough for a redirect to a particular supermarket? -- 65.94.42.168 (talk) 03:53, 4 August 2018 (UTC)

That's a good catch, and it definitely should be changed. Southeast Asians have been eating mango with chili for far longer than Trader Joe's has been in existence. Probably the redirect was put in by someone who had only seen the product at Trader Joe's and thought it was unique to them. Maybe redirect to Mango#cuisine instead? It seems, though, that while chili-spiced mango may be a generic treat, the possibly intentionally misspelled Chile Spiced Mango is a trademark owned by Trader Joe's. So the redirect may be correct after all. On the other hand, this particular product is not mentioned in the Trader Joe's article at all, so perhaps the redirect should be deleted, leaving Chile spiced mango a red link? — Kpalion(talk) 16:34, 16 August 2018 (UTC)
According to wiktionary wikt:en:chile "chile" is a valid alternate spelling of "chili", so not a misspelling. WP:REDLINK certainly is an option, as is redirecting to mango. I'm good with going either way (change redirect or delete). -- 65.94.42.168 (talk) 21:53, 16 August 2018 (UTC)

Well done for wanting to get involved Govindduc! The best place for you to upload the images is indeed Wikimedia Commons, as the images are then available for use here and across all language versions of Wikipedia. The upload wizard (link here) is pretty self-explanatory. Tips I'd give are to make sure that there is enough detail in the file name and description, and to scout around to see what appropriate categories (e.g. start at Category:Food) the images should be filed in before you upload as it is a lot easier to add the category tags at upload (although it can be done later too). World Heritage Cuisine Summit 2018 Edit-a-thon

Hello folks, my friends Satdeep Gill and Wikilover90 from Punjabi Wikimedians User Group are organising an online edit-a-thon in collaboration with World Heritage Cuisine Summit 2018. More than 40 Chefs from all around the world will be presenting their exotic and unique dishes at the historic Gobindgarh Fort in Amritsar, India, during 12–14 October 2018. The summit itself is an initiative of the World Cultural Culinary Heritage Committee of the World Association of Chefs Societies or WorldChefs. Join hands with us to take part in this campaign to create content about some dishes that are to be featured at this summit. These articles will be presented in the form of QR Codes at the summit. We will later be adding QR Codes to the dishes made by celebrity chefs from 40 countries. We've created a list of articles for focus. This list has several dishes which are yet to have articles on English Wikipedia, and also many them need significant expansion. You can pickup one article, and sign-up indicating that under the "English Wikipedia" section under the first section of the page. For a number of years we have been experiencing a steady decline in the number of administrators as a result of attrition and a declining number of editors willing to consider adminship. Things have reached a point where we are starting to experience chronic backlogs in important areas of the project including noticeboards, requests for closure, SPI, CSD & etc. If you are an experienced editor with around two years (or more) of tenure, 10k edits give or take and no record of seriously disruptive behavior, please consider if you might be willing to help out the community by becoming an administrator. The community can only function as well as we all are willing to participate. If you are interested start by reading WP:MOP and WP:RFAADVICE. Then go to WP:ORCP and open a discussion. Over the next few days experienced editors will take a look at your record and let you know what they think your chances are of passing RfA (the three most terrifying letters on Wikipedia) as well as provide you with feedback on areas that might be of concern and how to prepare yourself. Lastly you can find a list of experienced editors who may be willing to nominate you here. Finally, I may not have this page on my watchlist, so if you want to reply to me directly please ping me. Question about the best way to get the right people's attention

Clodagh McKenna Google Google News Amazon is an Irish celebrity chef who doesn't have an entry in Wikipedia. Where is the best place to get good food/chef editors to take a look and make a judgment about whether we should have one? @Jimbo Wales: In general, high traffic pages work better. I only read this because I wanted to check if you had been active recently.

@Davey2010: you haven't? I'm surprised! Luckily, I have no shame to create stubs and let wiki magic do it's thing. What's also interesting is that this is first time I've encountered a subject that is notable, Wikipedia doesn't have an article about but Everipedia does. I didn't use any of it though.. no sources (or they don't work, their site is broken), but it might serve as inspiration.
